If you like beetroots, you have to try this recipe. Beet salad with feta cheese and walnuts is one of those salads that I prepare especially at festive meals and is very appreciated by my loved ones.
First time I ate this salad a few years ago my aunt’s. At first I found it strange and did not know what taste can have all these ingredients combined, because back then I was used only with classic recipes, not with combinations of sweet, from beets and salty like feta cheese. Not to mention the inclusion of walnuts in a salad.
Let’s see the recipe!
2 large cooked beetroots
2 garlic cloves
3-4 tablespoons of homemade mayonnaise
100g feta cheese
Salt & pepper to taste
One handful of walnuts
Chopped parsley (to taste)
Boil the beetroot for 30-40 min until it becomes soft (the fork should enter in it easily). Meanwhile prepare the mayonnaise (see my recipe HERE )
After the beetroot is boiled, let it cool, then cut it into small pieces (cubes) and put them in a bowl. Chop parsley, crush the garlic and cut feta cheese into cubes
Check if the beetroot is cooled, then put over it the mayonnaise, parsley, garlic, salt, pepper and mix.
Put on a plate and some feta cheese and walnuts and whenever you feel the need, you can add them to the salad. All these ingredients work very well together. This time I preferred to eat it simple with whole-grain buns, but if you make a festive meal, this salad goes great as a garnish with a meat of your choice.
