Carrot Cake with chocolate glaze. I can say that this is the most delicious cake I’ve ever done.
Two months ago Nestle Dessert Romania organized a contest, to which I also participated with this wonderful recipe of carrot cake. I didn’t win the big prize, but I took it as an experience. I want to tell you that I really wanted to show you the recipe, so I thought it would be a good idea to post it on the blog.
Carrot cake may seem strange to many of you. I mean, nobody thought that you can put carrots in a cake, right? Most of us see carrots as one of the main ingredient in lots of recipes. Carrot cake is gaining more and more reputation and rightly so. It’s a not very sweet cake, the dough is moist from carrots and crisp from the walnuts, and the chocolate glaze matches perfectly with the whole cake.
Let’s see the recipe. It’s absolutely D E L I C I O U S!
200 gr. flour (100 gr. white flour, 100 gr. whole flour )
2 grated carrots
3 tablespoons of coconut sugar
150 ml. oil
5 tablespoons yogurt
1 hand full of raisins
2 handfull of walnuts
zest of one orange
1 tablespoon of baking powder
A pinch of salt
1 teaspoon of> baking soda, 1 teaspoon of cinnamon
½ teaspoon of: nutmeg, powdered ginger, cardamom
For glazing: approx. 1 Nestle Dessert Noir Chocolate Tablet Chocolate Tablet
In a bowl put flour, raisins, walnuts, baking powder, a pinch of salt, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, half a teaspoon of: nutmeg, powdered ginger, cardamom. Mix all the ingredients.
In another bow, beat the 3 eggs together with sugar and oil, then put them over the dry ingredients. Mix well, then add carrots and 5 tablespoons of yogurt.
Put a baking sheet in a tray with removable bottom (26 cm diameter), grease it with a little oil, then pour the entire composition into the tray and put it to the preheated oven at 180°C for 30-35 minutes or until a toothpick inserted in the middle of the cake comes out clean. Take out the cake from the oven and allow it to cool for approx.1 hour. Once it’s cold, you can make the glaze.
Melts the chocolate over a bain marie until it becomes liquid. Pour the melted chocolate over the carrot cake, then smooth the whole surface, taking care to reach the edges.
Decorate with walnuts and orange zest. Put the cake in the refrigerator for 1-2 hours, then serve.
