There is nothing complicated, nothing sophisticated with the recipe that I’m showing you today. It’s an easy recipe to prepare, but also very tasty. Chicken legs can be cooked in a thousand ways, chicken meat being a very versatile, without too many calories, so it is perhaps one of the most consumed meats.
I like to have simple ingredients on my plate and if I can, I like to cook with as few ingredients as possible. I believe that a tasty recipe does not require a long list of shopping. For this recipe I used only three basic ingredients. Yup, only THREE!
I did not invent something amazing with this preparation, but I hope this will come as an inspiration to many of you for lunch or dinner. And you know what is the most interesting part of it? I used only a pan to cook the whole recipe. Anyway, nobody likes to wash all the pots and pans after cooking, so this is a bonus for all of us.
Here’s the recipe:
8 chicken thighs (whom I removed the skin, which is totally optional)
500 gr. champignon mushrooms
200 g frozen green peas
2 onions (I used one red and one white)
salt, pepper, garlic powder and paprika to taste
Wash the chicken thighs under running water, then season them with salt, pepper, garlic powder and paprika. Peel the mushrooms and cut them in which size and shape you want. Peel and cut the onions
Put 3-4 tablespoons of olive oil in a pan and fry the chicken thighs for 10-15 minutes over medium heat, turning them occasionally from side to side to cook evenly. Once you have fried the thighs and they formed a golden crust on the surface, put them to a separate plate. If you like, throw the oil in which you fried the thighs (which I’ve done it), and clean the pan with kitchen paper. Put another 2 tablespoons of olive oil in the pan and fry the onions for 3 minutes.
After the onions became translucent, add chopped mushrooms and fry them for a few minutes until you see water coming out of them. When the water comes, adds the chicken thighs in the pan, put a glass of water (250 ml) and let to boil for 25-30 minutes. Turn the thighs halfway through to cook evenly. In the last 5 minutes, add the green peas into the pan, put water if needed and let all the ingredients boil for 5 min. Taste and see if you need to season with salt & pepper
That’s all. Put all ingredients in a dish and enjoy this tasty and healthy recipe.
