Dates truffles with pistachios and hazelnuts

When I was a little I loved sweets very much, like any child of my age. Candies, chewy caramel and waffles with lemon cream were my favorites. God, how much I loved them! Time passed and slowly I gave up of buying candies and all sorts of sweets, cookies etc. and instead I started to make them at home, taking care not only of the ingredients I use, but also of their quantity.

While I was making these dates truffles with pistachios and hazelnuts I remembered my childhood and those time  when I was at my grandmother and I made “candy” out of wet soil from her garden. This I found very interesting at some recipes, the fact that they can give you certain emotions, good feelings and memories from ”the dusty trunk”.

About the today’s recipe, only good words! They are no bake truffles, very good, super fast to make, which can be eaten as fast as you made them, if you know what I mean. Just be careful that even though they are made without sugar and other harmful ingredients, but they are quite caloric if you eat them in large quantities. I recommend you to eat them when you need something sweet, between meals as a snack or even before some exercise for energy, thanks to dates and oats.

The holidays are coming soon, so you can make them and give some dates truffles with pistachios and hazelnuts to your guests. They will like them, I promise!

INGREDIENTS
35 dates from Orlando’s*
100-130 gr. fine oats *
1 tablespoon of karob or cocoa powder
½ teaspoon of salt
To cover the truffles: pistachio and hazelnuts

* You can use even more dates, but then you have to increase the amount of oats
* Truffles are pretty sweet from dates, but if you want you can also add 1-2 tablespoons of honey, maple syrup, agave syrup or any other sweetener.
* You will need to add as many grams of oats to form a homogeneous and sticky “dough”

PREPARATION
Ideal would be to have pitted dates, which you have to soaked them in warm water for 1-2 hours before using them, because they become more soft. As long as the dates ” are swiming” in the warm water, place the oats in a food processor and mix them for 2-3 times, then transfer them into a roomy bowl, together with the karob powder and a pinch of salt. The oats flakes don’t necessarily have to take the form of flour, you just have to mix them a bit in the food processor!

Put the dates in the same food processor (or you can use a vertical/hand blender) and mix them until they form a paste. I also added 2-3 tablespoons of the water where the dates soaked, to help the blender to mix them well.

Add the dates paste in the bowl over the oats and mix the ingredients with your hand. The composition must have a homogeneous and sticky texture. Form the truffles of what size you want and place them on a plate.

Grind the hazelnuts and pistachios with a knife, then roll the truffles through them so they can be completely covered with “magic dust”=crumble. Put the truffles in the refrigerator until they are served.
