Mushrooms play an important role in my menu. I really like them and I cook them in various ways. Today I wanted to show you how I make a cream of mushroom soup, which is a healthy and extremely simple recipe. It’s good for those of you who are busy and don’t have enough time to spend in the kitchen cooking sophisticated recipes.
There are thousands of interpretations of this recipe, but I like to make it as simple as I can, with few ingredients which are accessible to everyone. Mushroom cream soup is the ideal choice for a lunch or a light dinner because it has low calories, yet it is very consistent.
500 gr. champignon mushrooms
½ celery root (or to taste) cut into small pieces
2 medium potatoes cut into small chunks
3 garlic cloves
2-3 tablespoons of olive oil
2 tablespoons of greek yogurt
Salt&pepper to taste
Put 2-3 tbsp of olive oil in a pot and sauté the onion for 3 mins until it becomes translucent. After that, add the potatoes, the celery and the garlic finely chopped. Cook them for 2-3 mins, stirring occasionally. Add water enough to cover the ingredients and leave to boil for 15 mins. Season with salt.
After 15 min add the mushrooms cleaned and cut into small pieces. Add water if needs, then let it boil for another 15 mins. With a vertical blender, blend all the ingredients until they take the form of a cream soup. Add 2 tbsp of greek yogurt, mix and taste to see if need more salt&pepper.
