Dear foodies, today I’m showing you the easiest recipe for chicken nuggets, for which you don’t even need oil, flour and eggs, as the original recipe requires. Basically, there are nuggets made in a healthier way, for which you only need chicken breast, corn flakes and a few spices. Simple as that!
Before going to the description of this recipe, I want to tell you that the first time I ate chicken nuggets was at a fast food in the USA, in Atlanta, 4 years ago when I was there with a student program, Work & Travel. I think the fast-food was called Chick-fil-A and obviously I took the whole pack, which is, a portion of nuggets with fries and some sauces. I liked them a lot and when I returned home, I tried to make the recipe and they went out super good.
Well, because I always look for healthier alternatives of many recipes, this time I preferred to make some oven baked and not fried chicken nuggets, I didn’t use oil, flour and eggs, but only TWO basic ingredients: chicken breast and corn flakes. Also as a alternative, I chose to grind the chicken breast at home and not to cut it in pieces as the recipe requires.
Instead of the classic sauces that are recommended for these nuggets (barbeque, ketchup or mustard sauce), I went on a simpler / healthier version, which is, a cool tzatziki sauce based on greek yogurt, cucumber and dill . They went really well together.
These chicken nuggets are very tasty, they have a crisp texture on the outside, they can be eaten at lunch or dinner, along with the same sauce as the one I prepared or next to a salad. They are perfect to take with you at school, college or work in a casserole.
Look how easy you can make them:
INGREDIENTS (for 20-21 nuggets)
650 gr. deboned chicken breast, without skin
40-50 gr. unsweetened corn flakes (if you are celiac, look for gluten free corn flakes)
Spices: salt, pepper, granulated garlic, paprika and chilli (all to taste)
Optional: You can also add dryed herbs
I minced the chicken breast at home with a food processor, but you can buy it ready minced. Know that you can choose either to make nuggets from the whole chicken breast, then cut it into suitable cubes, or you can choose minced chicken meat.
After I’ve miced the chicken and spiced it with salt, pepper, granulated garlic, paprika and chilli, I mixed well the whole composition, then formed small meatballs, then gave them a rectangular shape, flattening them with my hand.
I put the corn flakes in food processor and I grind them a bit until they became fine. If you don’t have a food processor or a blender, put the corn flakes in a hermetic bag and crush them with a cup or with your fist.
I rolled the nuggets through the corn flakes, then put them on a tray covered with baking paper and let them bake into the preheated oven at 180 °C, for 35-40 minutes. I turned them from one side to the other side halfway through.
They are good to eat immediately, along with a tzatziki sauce or with salad.
* I recommend that you make all the nuggets at once, and only then roll them into the the crushed corn flakes!
* It is much easier to form the nuggets if you have the hands a bit wet!
