I like to drink smoothies especially in the morning because they are very filling and they can easily replace a real breakfast if you don’t have the time to make it. I was surprised to see that I still can find butternut squash in this period in supermarkets, so I bought two, one I used in this recipe and the other I cut it into small pieces and put it in bags in the freezer. In this way I’m sure if I get a craving of a butternut squash recipe and there’s no more of them in the supermarkets, I have my own reserve.
Now let’s talk about smoothies. Protein smoothies or shakes are a perfect choice, especially for those who workout. Either you buy all kind of protein powders, or there is the variant that I prefer, which is to add in my smoothies super-foods with a high content of protein.
Let’s see how I made this yummy smoothie!
INGREDIENTS (for 2 servings)
4-5 tbsp of baked butternut squash puree (or pumpkin)
1-2 tbs cinnamon
2 frozen/fresh bananas
250 ml. milk (I used almond milk, but you can choose you favorite milk: dairy or non dairy)
A handfull of oats
Optional: 1-2 tbsp of honey
Last night I baked the butternut squash (45-50 mins) so I can use it this morning at breakfast. The bananas that I used were frozen to create a creamy consistency (I cut in slices and put them in freezer the night before). This step is optional, but if you use fresh bananas, you can add a few ice cubes into your smoothie.
The idea is simple: you need a blender, in which you put all the ingredients listed above and blend them for 15-20 secs.
My smoothie was quite creamy because I wanted to be like that, but if you want it to be more liquid, feel free to add extra milk. And no, you don’t need to add sugar or other sweeteners because it came out pretty sweet from the bananas and from the butternut squash because both have a sweet taste.
You can serve it simple just like that, or you can top it with some pumpkin seeds, walnuts, raisins, coconut flakes and extra oats.
Because it is quite creamy, I ate it with a spoon. So grab a spoon and enjoy this smoohie!
