Salad with valerian, mackerel and chickpeas, the most recent salad I tried and which I loved a lot. I thought you might want to try it too.
I don’t know how others are, but I’m one of the few people who could live with salads for the rest of their life. Truth is that, this is real, it’s happening right now in the present. From 7 days a week, I eat salads for about 3-4 days at lunch or at dinner. I think an honest salad, can save you from any situation, especially when you do not have time to cook when you come back tired at home after a long day or when you simply don’t want to spend too much time in the kitchen. You just “throw” some ingredients into a bowl and you’re ready to eat.
This time I’ve “thrown” some valerian into my bowl, an old pleasure of mine that I have not consumed for a long time. From what I read on the box it was packed, valerian:
- is rich in folic acid
- is rich in vitamin C
- removes fatigue, stress and irritability
- it’s good for those who have trouble with insomnia
So, I opened the box and made a salad with valerian, mackerel and chickpeas, basically with what I had in my kitchen. I call it improvisation, ladies and gentlemens. When you’re hungry, you do magic. Well, this is not a fine dining dish, nor a Michelin star one. The idea I want to emphasize is that you can make delicious, nourishing and healthy recipes with few and normal ingredients. That’s how it works in Foodieopedia Kitchen, I do not like complicated things, I prefer to stick to simple but yummy recipes.
About this salad I can tell you that I ate it without breath, it was super tasty and nourishing and the ingredients went very well together. I chose ingredients that contain fiber (celery, cherry tomatoes, valerian), but also protein (mackerel, chickpeas). Let’s take into account that mackerel is rich in Omega 3 fatty acids, which are essential for the body. So those who say that salads are only for people who are on a diet, they are wrong. A salad that is made up of protein, fiber, healthy fats, and complex / good carbohydrates, fuel the body with everything it needs to function properly.
I talked a lot again, right? Let’s see how to make this salad with valerian, mackerel and chickpeas?
INGREDIENTS (for one serving)
½ box of valerian
1 can of mackerel (I used mackerel fillet, you can use tuna, but I think it would go well also with a smoked fish)
5 tablespoons of chickpeas
4 tablespoons of green cut olives
5 cherry tomatoes
2 celery stem
Dressing: 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 2 tablespoons of lemon juice, salt&pepper (to taste)
*** Increase the quantities according to how much salad you want to make
Wash and pun the valerian in a strainer for 10-15 minutes. Meanwhile, cut the cherry tomatoes in half and the celery into smaller pieces. Put the valerian in a bowl and on top put the rest of of the ingredients: the cherry tomatoes, the celery, the chickpeas and the green olives.
Make the dressing: In a bowl put 2 tablespoons of olive oil, 1 spoonful of balsamic vinegar, 2 tablespoons of lemon juice, salt and pepper to taste and mix. Put the dressing in the salad bowl and mix. Keep 1-2 tablespoons from the dressing.
At the end, put the mackerel fillets over the salad, and over the mackerel put a little of the dressing that you kept.
