Strawberry chia seeds jam (no sugar)

It happened. Apparently, the “virus” of making strawberry chia seeds jam caught me to. It’s the fastest strawberry jam recipe for EVER, which I’m sure you will all love it. Basically you only need 2 ingredients + other  flavors, depending on your preferences.

Do you know what I like most about this strawberry chia seeds jam? The fact that I can finally eat a jam that doesn’t contain a large amount of sugar. For this recipe I used 2 tablespoons of honey because the strawberries I bought were not very sweet, but if you find strawberries that are pretty sweet, then add no sweeteners. Of course, it remains at your choice if you want to add honey, agave syrup or sugar. I would have preferred not to add any sweetener, but that is, a little honey didn’t hurt anyone and will never do it.

IDEAS of using/eating strawberry chia SEEDS jam
  • toast with cream cheese and jam
  • toast with peanut butter and jam (the classic Peanut Butter – Jelly toast)
  • you can add 2-3 tablespoons in a pudding
  • oatmeal + 2-3 tablespoons of jam
  • natural yogurt (Greek yogurt 2%) + 2-3 tablespoons jam
  • alongside with some fluffy pancakes (American pancakes)
  • in the dough of some cakes

However you choose to use the jam, know that it’s very tasty, super fast to make and is a healthier jam than the ones that our mothers and grandmothers are used to make. We all know that in a classic jam recipe, a large amount of sugar is added, because it has the role of preserving it. For a strawberry jam with chia seeds, no sugar is needed, so my advice is to make as much jam as needed to consume it in a shorter time. The amount I have made is not big, it was just a small jar, it lasted for 2 weeks in the refrigerator and the taste was the same.

INGREDIENTS
500 gr. strawberries (fresh or frozen)
3 tablespoons chia seeds
zest from 1 lemon
1 tablespoon of almond essence (at your choice may be vanilla or rum essence)
Optional: 2 tablespoons honey / agave syrup (if your strawberries are pretty sweet, then don’t add honey.)

PREPARATION
Wash and cut the strawberries into smaller pieces, then put them in a pot. In the same pot add the zest of a lemon (pre-washed) and mix. Leave to heat for 7-10 minutes until strawberries start to leave water.

After 7 minutes, add 2 tablespoons of honey and almond essence, then with a mashed or a fork, mash the strawberries until they take they become more like a sauce. Add the 3 tablespoons of chia seeds, mix and leave everything to boil only for about 1 min.

Turn off the fire and let the jam cool and thicken. After about 5 minutes, you will notice how its consistency will be the same as a usual jam. Put the strawberry chia seeds jam in a regular jar or in one with hermetic seal. The jam can stay in the fridge for up to 2 weeks. During this time it will continue to be more and more cohesive.

Serve the jam as you pleased! 🙂
