Sweet potato toast with guacamole

I’m a big avocado fan, I said it before and I will repeat it as many times as I have to. I already have on this blog a few recipes in which I used avocado, including guacamole recipe. Besides this super-fruit, you know what I like? Sweet potato, so I thought to combine them in a recipe. I’ve seen this kind of toast on the internet and I really wanted to try it.

Sweet potato toast with guacamole is a super yummy recipe. Besides it is very nourishing, this recipe is very simple and very quickly to make, perfect for those who don’t have too much time to spend in the kitchen.

Now, let’s get to work!

INGREDIENTS
1 large sweet potato (try to choose a longer one)
1 ripe avocado
½ red onion, finely chopped
½  juice of a lemon
4-5 cherry tomatoes
parsley, chopped
2 tablespoons of olive oil
salt & pepper (to taste)

PREPARATION
Wash the potato. Cut it into slices (about 0.5 cm), seasoned the slices with a pinch of salt, pepper and sprinkle them with a bit of olive oil. Put them in a preheated oven at 180 ° on a tray lined with baking papper and leave them in the oven for 15-20 minutes or until soft. Turn them from one side to the other halfway through so they can cook evenly.

While the sweet potato slices are cooking, you can prepare the guacamole sauce. Cut avocado in half, put the core in a bowl, sprinkle with lemon juice, season with salt, pepper and with a fork mash the avocado until it becomes a paste. Add parsley and chopped red onion. Mix. Keep a little onion and parsley for decoration.

Once the sweet potato slices are baked, leave them 5 minutes to cool, then add 1 or 2 tablespoons of guacamole over the slices and decorate them with onions, parsley and cherry tomato cut in half.
