There are lots of ways you can cook with broccoli, but how about pancakes? These pancakes are an interesting way to use an ingredient that not many people like it and add it in a absolutely delicious recipe. Even those who are not broccoli ,,fans” will love this recipe.
A reasy and simple recipe, with few ingredients. A recipe that can be served at any time of the day in the family (replacing a main meal), but also with friends at a party, being an ideal snack. Put broccoli pancakes in a casserole and take them at work. Your colleagues will surely ask you the recipe.

Here’s how you can prepare these absolutely delicious broccoli pancakes:

INGREDIENTS
1 broccoli
2-3 eggs
4 tablespoons of breadcrumbs (you can replace it with flour)
2 tablespoons grated Parmesan cheese
olive oil for frying
salt & pepper to taste

PREPARATION
Cut broccoli into small florets and put them to boil for 3-4 minutes. Take them out of the water after they are boiled and put them in a bowl with ice cold water to cool. Once cooled, cut broccoli with a knife into smaller pieces, then squeeze them well in your hands to drain all the liquid. In a large bowl put broccoli, Parmesan cheese, breadcrumbs, eggs and mix well throughout the composition.
*** I gradually added the eggs to better control the composition. For these pancakes I used 3 eggs.
Add olive oil in a pan. Take a spoonful of composition and form small pancakes. Fry them at low heat 1 minute per side or until a brown crust has formed. Put them on a plate covered with a napkin to soak up the oil.
*** No matter their shape, they don’t need to be perfectly round. Also, it depends on you how thick or how thin you want your pancakes.
