Cauliflower Pizza Crust

Cauliflower pizza crust, a real surprise and much more tasty than I expected. Pizza, guilty pleasure of many of us. I have to admit that pizza is among my favorite dishes when I want to have a „cheat day”. Did you know that you can replace the classic dough from flour with a crust of cauliflower or zucchini? Well, I accepted the challenge and made a pizza crust from cauliflower.

Cauliflower pizza crust has gain popularity in the past few years, it’s a great low-carb alternative and easy to make. The cauliflower crust successfully replaces the classic pizza flour dough and it is a low carb version because it doesn’t contain flour or not as much as the usual pizza dough.

This pizza is perfect for those who want to try something new and to reduce the carbohydrates in their diet.

Some will say that this is a healthier version. Maybe it is, maybe it’s not. Yes, this may not have that many carbs as a regular pizza dough made with flour, but it contains the same amount of fats from cheese as a normal pizza does. 

And what do we know about fats? They have 9 kcal/gr., double than carbs, which have 4 kcal/gr.

I have to admit that I was a little nervous the crust because it’s northing like a normal crust and because I was afraid that it will crack. Its taste is totally different, but it’s normal, because it’s made of cauliflower and if you like this vegetable, its taste will not bother you in this recipe.

I recommend this cauliflower pizza to all of you, because it’s easy to make and very tasty. Oh, and hey, can you believe that this pizza is 90% made of vegetables. What could be better than that?

INGREDIENTS
1 cauliflower
2 eggs
2-3 tablespoons of bread crumbs
3-4 tablespoons of grated parmesan cheese
1 tablespoon of: garlic powder, dried basilico, salt&pepper.
Topping: pizza sauce (tomato sauce), grated cheese, slices of tomato and red onion, yellow bell pepper, olives, mushrooms, sweet corn, arugula.

PREPARATION
Cut the cauliflower into small florets, put them in a food processor and puls until finely chopped ( like rice ). Transfer the cauliflower to a baking sheet lined with parchment paper and put it in the preheted oven at 180°C for 10-13 mins. Stir from time to time.

After that, let the cauliflower cool for about 10 minutes, then transfer the cauliflower in a clean towel and squeeze out the excess loquid as hard as you can. In a bowl combine the sqeezed cauliflower, 2 eggs, parmesan cheese, bread crumbs, garlic powder, pepper, dried basil, salt and black pepper, then mix well.
Be careful nor to add too much salt because the parmesan cheese is quite salted!

Transfer the dough onto a baking sheet lined with parchment paper (you can use the same parchment paper as in the 1st step). Press and shape the dough into a pizza crust and put it in the oven for 15 minutes. 

Top the crust with your favorite pizza toppings and put it again in the oven 5-8 minutes until the cheese is melted.

Take out the pizza from the oven, leave it to cool for a few minutes (10-15) then you can cut it in slices. If you cut it while it’s still warm, when you take in your hand, it is very likely to break the crust.
