Hello, dear foodies! Remember my cauliflower pizza crust ? The same principle follows this recipe that I am showing you today, except that now you need only TWO ingredients: cauliflower and eggs.
These tortillas cauliflower are a much healthier alternative to those that we see in supermarket, because they are not made of flour, they are gluten-free, low in calories and full of nutrients. In addition, they are extremely easy to make and really delicious. I ate them this time with hummus (see the hummus recipe HERE ).
I hope that you are already used with this kind of recipes, that are a little different, healthier, because hey, stews and broths you can find them everywhere, but healthy recipes that you haven’t have thought to make, I don’t think you have looked for them. I mean, do not get me wrong, I did not invent this cauliflower tortilla recipe, it is a simply inspiration from Google and other sources. And by the way, I do eat stews and broths.
My point is that I am trying to show you that you can make other kind of recipes, and I saw that you like this kind of recipes because I received a lot of messages of encouragement in this regard in which you thank me for showing you recipes that are not common.
Let’s see how I made these mini cauliflower tortillas!

INGREDIENTS
1 cauliflower
2 eggs
Spices: salt, pepper, basil dried (taste)
Optional: you can add 2-3 tablespoons of grated Parmesan cheese and other spices of your choice

PREPARATION
Cut the cauliflower into smaller pieces, then put the cauliflower florets in a blender/food processor and pulse a few seconds so they take the form of rice. If you don’t have a food processor, you can grate the cauliflower. Transfer the cauliflower rice consistency in a bowl and leave it for 4-5 minutes in the microwave.
After 5 minutes, remove the cauliflower, put it in a clean kitchen towel and let cool for 10-15 min. Squeeze excess water as much as you can, then transfer the ,,cauliflower daugh’’ again in the same bowl. Add in the rest of the ingredients (eggs and spices) and mix well.
Separate the mixture into 4-5 balls, spread each ballout on a parchment-lined baking sheet and form the tortillas in the size you want. Leave them in the preheated oven at 180°C for 12-15 minutes. Flip them from one side to the other halfway through.
That’s it! You can eat them with hummus, with guacamole, with a lentil pate, with a filling for tacos, quesadilla, etc. You can, for example, put grated cheese on top and leave a few more minutes in the oven to melt the cheese, then add a few ingredients and you have healthy mini pizzas.
