September 2016, the year when I finally had the courage to start a food blog. At first I was unsure, I thought that nobody will read my recipes, why should anyone enter on my blog ,, a newcomer ” in this niche?
One day I decided to start on ,,this road” and I began to post recipes quite often, to share them on different food groups and different social networks. The world appreciated me and commented on my recipes. Every day I received positive feedback, encouragement messages and all those thoughts from beginning disappeared when I noticed that I have the support from my familly and my closest friends, but also from many unknown people, many of them have became active readers of my blog, and I thank them for being there, with every recipe.
1 Year of Foodieopeodia!
It’s been a year since I had this food blog, a year since I shared with you my best recipes, a year since I have evolved and tried to show you a part of me, a part of it what Nico is. After a year of blogging I am very pleased with everything I did, the results, and the collaborations I have had. I hope to keep inspire you with my posts from now on and to join me as you’ve done so far.
To celebrate this event, I made a simple dessert, nothing complicated or sophisticated, but very tasty: a chocolate cake with hazelnuts.

INGREDIENTS
200 gr. flour
3 tablespoons of cocoa
3 tablespoons of brown sugar
10 gr. baking powder
1 teaspoon of baking soda
a pinch of salt
a handful of hazelnuts cut in half
3 eggs
125 ml. of coconut oil
250 gr. of simple yogurt
6 tablespoons of orange juice
Glaze: 3 tablespoons of cocoa, 4 tablespoons of coconut oil, 2 tablespoons of honey

PREPARATION
First put in a bowl all the dry ingredients listed above: flour, cocoa, baking powder and baking soda. Mix all ingredients.
In another bowl, beat three eggs together with sugar. Add coconut oil, yogurt, 6 tablespoons of orange juice and mix everything well. Put this wet composition over the dry ingredients and mix so that it all blends well. At the end add hazelnuts.
Put the composition in a cake tray (I used a 26 cm tray with detachable walls) and put the tray in the preheated oven at 180°C for 25-30 minutes or until a toothpick inserted in center of the cake comes out clear.
Take out the cake from the oven and let it cool for about 1 hour. For glaze you can use either a chocolate tablet, which you melt it in bain marie and put it over the cake, either as I did (not having a chocolate tablet at hand): I mixed 3 tablespoons of cocoa with 4 tablespoons of coconut oil and 2 tablespoons of honey. I have mixed these three ingredients, then I put the glaze over the cake and spread it well all over the cake.
It’s your choice how you want to decorate the cake. I put some ground nuts on the edges, some hazelnuts and slices of orange in the middle.
