My foodies, today I want to show you a crostini recipe with cheese, beetroot and orange. Crostini are traditional Italian appetizers that can be prepared with simple and differrent ingredients, which practically do not need a particular recipe. You just need imagination and to know how to combine different tastes.
I think that beets and cheese (feta, mozzarella, cottage cheese, ricotta etc.) can never fail in a recipe. That is why I chose to use for these appetizers cheese spreads/cottage cheese.
The „the cherry on top” for this recipe, which is the little bit of honey I put over the bread slices, was exactly what it takes for little appetizers / snacks to be perfect. If you like, you can omit honey or you can use another sweetener (eg, agave syrup, maple syrup).
These crostini with cheese, beetroot and orange can be served at a festive meal as small appetizers, but they can also be eaten at breakfast.
Method of preparation is very simple:

INGREDIENTS
300 gr. creamy cheese spreads/cottage cheese
1 baguette (I used fitness baguette with seeds )
2 oranges
½ beetroot
2 tablespoons of honey/agave syrup
Optional: walnuts

PREPARATION
Peel and cut beets into cubes, season with a pinch of salt and put them in the oven on a tray with baking paper for 20-25 minutes on low heat. Mix cubes of beet from time to time and take care not to burn them. You can sprinkle them with a bit of lemon or orange juice after 10 minutes.
Wash the oranges, then grate their peel. Put grated zest over the cheese and mix. Remove the white part of the orange and take out the orange slices and place them on a plate. Cut the baguette into slices (approx. 1 cm). You can brown them in a pan, if you want them to be crispier.
Once the beetroot is baked (it should be soft), it is time to assemble the crostini. Spread slices of bread with cheese, put a few cubes of beetroot over the cheese and on top put a slice of orange. Repeat until there are no slice of bread. Place them on a plate and pour over a little honey.
