Hello, dear foodies! I want to tell you that I’ve been craving for pizza this days and I really wanted to make a normal pizza, but where’s the fun? So I thought I could play in the kitchen and I made this mini eggplant pizza bites, which were very good. You have to try them too!
These eggplant pizza bites are very quick to prepare, so they are ideal for those days when you do not have time to cook. They can be simple snacks / appetizers, which can be served even at festive meals. They are also good for a light lunch or dinner.
I really liked this mini-pizzas and I’m glad I made these and not a normal pizza with dough, because in this way I avoided lots of carbs, because lately I didn’t eat too healthy. But that’s it, I came back to my usual program again, I try to eat as healthy as possible and I even returned to the gym. Gotta keep this body in shape.
Too much talk, let’s get to work!
olives without stones
a little olive oil
salt, pepper, dry / fresh basil
* The quantities you choose will depend on how many pizzas you want to make
* You can choose other ingredients for topping: cheese, mushrooms, red pepper, sweet corn etc.
Cut the eggplant and mozzarella in round slices and the onion in strips (julienne). Cut the cherry tomatoes into quarters, olives in smaller round pieces and spinach in smaller strips.
Put the eggplant slices on a baking sheet grease a little olive oil. Add 1 tablespoon of tomato pulp on top of the eggplant slices, then a slice of mozzarella and finally decorate with cherry tomatoes, spinach, red onion and olives. Sprinkle on top dry or fresh basil.
I have chosen to decorate each of the pizza bites different and not to load a single eggplant slice with all the ingredients.
Bake for 10-15 minutes. Serve them warm or cold.
