Avocado deviled eggs

What a surprise, huh? AVOCADO comes back on this blog in a recipe that I really like. A simple appetizer to make, where you only need some eggs, 1 avocado + spices and it’s done in max. 20 minutes. How does this sounds?

Do you want an idea of appetizer easy to prepare? Try this recipe of avocado deviled eggs, which are not only tasty but also healthy. It is an excellent idea for those who avoid the classical recipe where you have to use mayonnaise. Avocado paste successfully replaces the mayonnaise, so you do not have to worry about the number of calories. I hope it’s not necessary to say that this is an appetizer full of protein and healthy fats.

You can make this recipe anytime: either for a festive meal or for a holiday (Easter, Christmas), but honestly, you do not need any reason to cook these avocado deviled eggs, they can be eaten whenever you like something good and healthy to eat

Let’s see how I made this yummy avocado deviled eggs!
6 boiled eggs
1½ avocado
½ red onion, finely minced
juice from a ½ lemon
salt & pepper (to taste)
Optional: a little paprika to decorate

Boil the eggs for 10 minutes, then Let them cool down. When the eggs are cool enough, remove the shells. Cut the eggs half lengthwise, remove the yolks and put them in a bowl.
Avocado paste: cut avocado in half, remove the core and put it in a blender, along with the lemon juice and mix until it becomes a paste. If you do not have a blender, you can mash the avocado with a fork.

Put the avocado paste over the yolks, season with salt and pepper. Mix to combine. Put this composition in a pastry bag and fill the egg whites. If you do not have a pastry bag, you can use a spoon.

Decorate the eggs with red onion and a little of paprika.
