Today’s culinary journey takes us in Texas!!! Chicken Chili con carne is my choice for this culinary journey, a super tasty, full of flavor and mega simple to make.
The origin of the recipe that I am showing you today, surprisingly or not, isn’t Mexico. Honestly, I thought it was a mexican recipe, but it seems Chilli con Carne is the official dish of the state of Texas, USA, and the beans were not even on the list of ingredients when this recipe was first made. The real Chilli con Carne is made with beef, but this time I preferred a healthier and low fat version, so I chose minced chicken instead. In other words, this dish is nothing but minced meat with onion, garlic, tomato sauce, beans and a few spices. A stew or whatever you want to call it.
I like it very much because it’s not complicated to make, you need only few ingredients and the spices you decide to use, are what really gives taste to this chilli con carne. This time I used a mix spices for chilli con carne, which in its composition has all the spices required for such a recipe: sea salt, garlic & onion powder, paprika, hot chili powder, coriander, oregano and cumin. At the end when I tasted to see how it is, I added a little bit of salt and a bit of hot chili powder because I wanted it to be more spicy.
Usually you can serve it with crackers, tortillas, but I this time I wanted to serve this Chicken Chilli Con Carne with tortilla chips, which went really well together. Yum, yum!
Here’s how I made this Chiken Chilli con Carne!
INGREDIENTS (4 servings)
500 gr. minced chicken (I was in the market, I bought a chicken breast, then I asked the butcher to grind it)
400 gr. red beans (1 can)
500 ml. tomato pulp/sauce
150 ml. water
2 medium red peppers, cut into cubes
1 large red onion, finely chopped
2 chopped garlic cloves (or to taste)
mix spices for chilli con carne
parsley, chopped (to taste)
First add a little olive oil in a pot and saute the onion at low heat for 2 minutes, then add the red peppers and those two minced garlic cloves and saute them for 5 minutes at low heat, until the peppers become softer, stirring from time to time.
After 5 minutes add the minced chicken, stir and let cook at medium heat for 8 minutes. Add the 500 gr. of tomato sauce, 150 ml. of water and let it boil for 10 minutes, then put the red beans in the pot and stir. Let all cook for another 5 minutes.
I added 2 teaspoons of the chilli con carne mix, then I tasted to see if it still needed more spices. Extra I added a little bit of salt and a little bit of chili powder.
Finally, add chopped parsley and mix. That’s it!
