I have to recognize that I am a pasta lover, and those close to me can confirm this. I don’t eat them very often, but when I’m craving, I admit that I can eat even two servings.
This time I cooked fettuccine pasta with vegetables, a very good and quick recipe that can be eaten both at lunch and dinner, beacause it is a light meal. I didn’t need much time to think about this recipe, it was a more improvised recipe. I was hungry, I had all the ingredients in the fridge and I said, why not? And the result was very good.

INGREDIENTS (for 2 servings)
150 gr. fettuccine pasta
1 small eggplant, washed and cut into cubes
1 small zucchini, washed and cut into cubes
5-6 cherry tomatoes, washed and cut into halves
1 or 2 garlic cloves (or to taste)
olive oil for sautéing
Spices: salt, pepper, dried basil

PREPARATION
Boil fettuccine pasta in water with a bit of salt according to the instructions on the package. In the meantime, put 3-4 tablespoons of olive oil in a pan and saute the eggplant cubes for 3 minutes, stirring from time to time. Eggplant absorbs the oil very quickly, so if needed, add some extra oil.
After this time, add the zucchini and saute for another 2-3 minutes. Cut the cherry tomatoes in halves and add them together with the crushed garlic in the pan and saute until the tomatoes soften a little. Season with salt and pepper.
At this time, the pasta should be boiled (al dente), drain them and keep a little of the water they boiled in. Add the fettuccine pasta in the pan with vegetables, put 2-3 tablespoons of the boiled water, mix the pasta and the vegetables and leave them to cook for about 1 minute.
Taste and see if you still need salt and pepper. Season with some dry basil. To your preferences, you can also put some parmesan cheese on top.
