Mushrooms play an important role in my menu. I really like them and I cook them in various ways. Today I wanted to show you how I make a cream of mushroom soup, which is a healthy and extremely simple recipe. It’s good for those of you who are busy and don’t have enough time to spend in the kitchen cooking sophisticated recipes.
There are thousands of interpretations of this recipe, but I like to make it as simple as I can, with few ingredients which are accessible to everyone. Mushroom cream soup is the ideal choice for a lunch or a light dinner because it has low calories, yet it is very consistent.
500 gr. champignon mushrooms
½ celery root (or to taste) cut into small pieces
2 medium potatoes cut into small chunks
3 garlic cloves
2 tablespoons of olive oil
150 gr. of greek yogurt 2% fat
Salt & pepper to taste
Put 2 tbsp of olive oil in a pot and sauté the onion and the garlic gloves for 3 mins until they becomes translucent. After that, add the potatoes and the celery root, both cut into small cubes. Cook them for 2-3 minutes, stirring occasionally. Add water enough to cover the ingredients and leave to boil for 15 minutes.
After 15 minutes, add the mushrooms cut into small pieces and stir. Add water if needed, then let the veggies boil for another 15 mins.
After the veggies are boiled, mix/blend all the ingredients until they take the form of a cream soup.
At the and add 150 gr. of greek yogurt, salt & pepper to taste and mix. Taste to see if needs more salt or pepper.
Serve the soup with fresh homemade croutons.
