Pancakes with banana and strawberries

Fluffy and tasty  pancakes. I just love them. Pancakes are those yummy things that we see especially in american movies, were actors eat them at breakfast.

Pancakes with bananas and strawberries are very tasty and a very simple recipe to make. They are soft, fluffy, a true delight for breakfast that can be served with your favorite topping. I chose strawberries, banana and agave syrup ordered from Farmacia Ortomoleculară. They are perfect for a quick dessert too.

As much as I tried to make the best pancakes, they never come out as I ate in America a few years ago. They have a thing for these pancakes. Pancakes are their favourite breakfast, they put butter on top and a ton of maple syrup + other toppings. I insert some pictures here from 3 years ago when I was in the USA, to show you how their pancakes looks like.


And now let’s get back to the romanian lands and let me show you how I made these pancakes with bananas and strawberries 🙂
INGREDIENTS (for 12 to 13 pancakes)
300 gr. wholemeal flour (you can use any type of flour)
350-400 ml. milk
2 eggs
10 gr. baking powder
1 tablespoon baking soda
1 tablespoon vanilla essence
3 tablespoons coconut oil (you can use butter or sunflower oil)
a pinch of salt
bananas and strawberries to decorate (you can also use other fruits)
Agave Syrup
** I chose not to add sugar in my pancake mixture because they  will be quite sweet from the fruits and agave syrup. If you want and ,, if you’re in a good relationship ” with sugar, you can add 2-3 tablespoons.

In a bowl put the flour , baking powder, baking soda, a little salt and mix. In another bowl, beat two eggs, then add vanilla essence, coconut oil and mix. Put this wet composition over dried composition.

Using a whisk or a wooden spoon, mix well all the dough, then gradually add milk. This way you  can control the composition and you’ll get the desired dough for fluffy pancakes.

Grease a pan with a little coconut oil (or sunflower oil) and put about 1½  tablespoon of dough into the pan and leave to form round pancakes. When small bubbles comes on the surface, flip the pancakes and cook them on low heat for another  few seconds.

Serve pancakes with agave syrup or if you don’t have, you can use honey. Add some fruits and enjoy to the full.
