Pasta with cauliflower sauce

The recipe of pasta with cauliflower sauce is extremely easy to prepare, but also very delicious. I like really pastas and I always try to find new ways to cook them, but this time, the cauliflower sauce is the star. What? Cauliflower sauce in a pasta recipe? Yes Yes! Relax, I know that many may not like cauliflower, but I swear you won’t feel its taste so much. Pinky promise!

I saw this recipe on a food blog a few month ago and I wanted to try. I would I have thought that a cauliflower sauce will go so well in a pasta recipe. It came out super tasty and even if you make more sauce, you can keep it in a jar and put it in the refrigerator for 2-3 days.

1 cauliflower
1 large chopped onion
3 garlic clove
3-4 tablespoons of olive oil
100 ml. milk (you can exclude it if you are vegan)
200 gr. pasta of your choice (I chose gluten-free Fusilli Pasta D’oro)
Optional: boiled green peas
Salt & pepper to taste

Cut the cauliflower into small florets. Boil them for 15-20 minutes until they are soft.  Cook your  favorite pasta as directed on package.

Meanwhile saute the onion for several minutes until it becomes translucent, then add the garlic and sauté them for another 2-3 minutes, stirring frequently. Once the cauliflower is boiled, strain the water, but keep a bit of water because you’ll need it when you will bled the sauce. Put the cauliflower in a blender with the sauteed onion and garlic, milk and blend all the ingredients for a few seconds. If the sauce it’s not quite creamy, add a bit of  water.  Taste and see if needed salt and pepper.

Serve immediately. Bon appetite!
