I don’t know about you, but I prefer those recipes that don’t require a lot of time cooking. “Fast, tasty and healthy” are 3 elements that I’m trying to follow most of the time when I’m in the kitcken, and today’s recipe follows exactly this rule.
Any kind of fish and seafood are the second source of animal protein that I eat most often after chicken meat. I’ve even convinced my mother to eat this salad that I’m showing you today, because she doesn’t like any type of fish. That’s the big difference between me and my mother, I’d eat fish every day, maybe she would eat once a year, on New Year’s Eve.
Since I mentioned New Year’s Eve (which is approaching), this salad with smoked mackerel and greek yoghurt is one of the recipes that I recommend you to have them for the New Year’s Eve dinner or for any another occasion. It’s a very nutritious, tasty and healthy salad, made with good protein sources (egg, mackerel and Greek yoghurt), so it’s perfect if you take care of your silhouette or if your daily menu contains more protein than other macronutrients. About the taste of this salad I can tell you one thing: DELICIOS!
It’s worth trying at least once this salad with smoked mackerel and with greek yogurt!
360 gr. of smoked mackerel
150-200 gr. greek yogurt
1 tablespoon of mustard
2 tablespoons of lemon juice
1 tablespoon of olive oil
parsley & dill, to taste
salt & pepper, to taste
* At your preferences, you can replace greek yogurt with classic mayonnaise, but I choose the healthy option.
Boil the eggs, let them cool a little and clean them of the shell.
Carefully clean the mackerel from its skin and bones. In a roomy bowl, put the mackerel cleaned and chopped (by hand or with a fork), the rest of the ingredients listed above, plus the finely chopped eggs. Mix all the ingredients well, then season with a little salt and pepper.
!!! Taste the salad before adding salt because the smoked mackerel is quite salty.
Decorate the salad according to your preferences, then enjoy it, simple or with slices of whole wheat bread.
