Recently I was at my grandmother, and as always she gave me a lot of goodies. This time I received pickles, potatoes, apples, baked eggplant and white beans.
It is very easy to make and very tasty. Perfect for vegans / vegetarians or just for those who want to eat something good. It can be eaten with slices of bread, wih crakers, on a pita or simple with vegetables.
Let’s see the recipe!
2 cups of beans (my cup has 300 ml.)
5-6 cherry tomatoes
4 garlic cloves (or taste)
½ a lemon juice
parsley (to taste)
Spices: salt, pepper, paprika, dried oregano
Leave the beans to soak in water overnight. The next day bring water to a boil and when it boils, add the beans and leave the to boil for 15 minutes.
After 15 minutes, strain beans and pun them in a pot with hot water. Repeat this operation 2-3 times until the water is clean. Beans should be boil in 40-45 minutes. Strain the beans but keep aprox 150 ml. of water in which they boiled.
In the last 10 minutes, put 2-3 tablespoons olive oil in a pan and saute 4 cloves garlic, being careful not to burn them. Add the sauteed garlic cloves over the beans, together with salt, pepper, dried oregano and paprika. In the same pan where you sauteed the garlic cloves, add a bit of olive oil and cherry tomatoes cut in half and saute them for 1-2 minutes until soft.
Using a hand blender, blend the beans until they become a paste. You can help the composition to become a fine paste by adding the juice of half a lemon, olive oil (4-5 tablespoons) and if nedded more liquid, add a little bit of water that you kept it.
Taste and see if needed extra seasoning. Pun the cream beans nn a plate or in a bowl cream, add a bit of of olive oil on top, sauteed cherry tomatoes and parsley to taste.
