I think that you already are used with me showing you simple recipes, with few ingredients, that you can make them quickly, because nobody likes to spend a lot of time in the kitchen, isn’t it?
Most of the recipes that I show you on this blog are healthy recipes because I am a promoter of this lifestyle. Of course it will be recipes that deviate from the rule, but those will be very few.
These zucchini rolls with cottage cheese and mixed vegetables are an healthy vegetarian snack or an appetizer. Zucchini are ideal when you’re on a diet or you simply keep a balanced diet because they have a wide range of vitamins and minerals which are easy to digest and have very low calories. We also find common properties at cottage cheese.
Here’s my recipe for stuffed zucchini rolls with cheese and mixed vegetables!
1 box of Light cottage cheese
½ red bell pepper
a few leaves of spinach
dill to taste
pinch of salt
* Vegetables can be replaced at your choice
Start by cutting the vegetables (besides the zucchini) into small pieces in the form of sticks. Cut zucchini into thin slices, salted them and leave them aside a few minutes until water came out of them. Wipe the slices of any liquid with kitchen papers, then grill them 30 seconds on each side. In a bowl mix cream cheese with dill and a little salt.
Once you have grilled the zucchini slices, put cottage cheese on each slice covering the entire slice. At one end of the slices put one leaf of spinach and sticks of each vegetable that you cut.
Roll the zucchini slices, then place them on a platter. If they do not stay rolled, secure them with a toothpick.
These rolls are perfect as a snack, go great on a festive meal, but can also be served as a lunch or a light dinner.
