KFC at home, but a healthier version: chicken thighs wrapped in corn flakes and potato wedges, served with sour cream sauce with garlic and potato wedges baked in the oven. A true delight!
We are all tempted to go eat at fast-food restaurants, because, hey, let’s recognize that their preparations are tasty. What we don’t know is what’s behind the counter, because at the end what we only see is the yummy food that they present it to us. It’s a subject quite controversial and and a lot of investigations have been done regarding ,,food safety” in fast-food restaurants and the results were not exactly pleasant: they found expired meat, I think you’ve also heard about that horse meat , which they labeled it as being beef meat, in some places the storage conditions of their products are not as they should be, etc. In addition, you should also think about the possibility that the final product you see in the dish was not made with fresh products, not to mention the oil in which they fry the potatoes, all the meat, which is used and reused many times.
God would punish me if I say that I didn’t eat from fast food before or if I would never eat again. What I want to say is that if you know you have a weakness for that kind of food, it would be best to make them by yourself at home. Yeah, maybe they will not be as tasty, but you will know what you’re putin in your mouth. And yes, you can go and spoil yourself once in a while with fast-food, but do it on your own responsibility.
I think that KFC crispy thighs are the most popular. How to resist that crunchy sound? For this reason I thought to share with you a recipe that can bring KFC at your house in a healthier way.
And by,, healthy ” I mean that, when preparing a recipe that you can find it in fast-food too, you have the opportunity to use the ingredients that you want and to use the technique of cooking that you want. For example: the potatoes that they give us in fast food restaurant are filled with oil, cooked in the same oil that they probably cooked other 10 portions of fries. You got the idea, right?
The potatoes that I used for this recipe are baked in the oven, and I used only 2 tablespoons of olive oil. See my recipe for potato wedges.
Look how simple is to make this KFC chicken thighs!

INGREDIENTS
1 kg chicken thighs
3 eggs
2-3 tbsp of milk
100 gr. of whole wheat flour
250 gr. corn flakes
1 tbsp of: black pepper, paprika, garlic powder, dried basil
2 tbsp of mustard and spicy chili sauce.
salt&pepper (to taste)
For sauce: 250 gr. of sour cream or greek yogurt, 2 grated garlic cloves

PREPARATION
You will need 3 bowls: in a bowl putthe whole wheat flour, all the spices (black pepper, paprika, garlic powder, dried basil) and mix well. In another bowl beat 3 eggs with a splash of milk. In the third bowl add crushed corn flakes. You can crush them in your hand or directly in the bag, either put them in a food processor and puls 2 times, if you want the flakes to be finer.
I removed the skin of the thighs, because I don’t like it, but you can skip this part. Remove the skin of the thighs and wash them under running water. Put the thighs in a bowl, over which add a little salt, 2 tbsp of mustard and spicy chili sauce. Mix well.
Coat the thighs in flour, then place them in the bowl with the beaten eggs and finally coat the thighs in crushed corn flakes. Put them in a tray covered with baking sheet. Place the tray in the prehited oven for 45-50 mins on medium heat (180°C). Time may depend on the power of each oven.
Once the chicken thighs have baked, you can serve them with delicious oven baked potato wedges, a sour cream/yogurt sauce with a garlic sauce or for a lighter version, you can eat them with to a salad.
