Lentil paté

I really like lentils, so I thought that I can show you how to make a delicious lentil paté, which is so yummy to eat with fresh bread. Lentils are full of nutritional value and is one of the best sources of vegetable protein. I eat lentils pretty often, especially during fasting when I give up on animal protein and I need a pretty good proteins substitute.

I don’t know about you, but I like anything that is spreadable: any paste, cream etc. In my fridge you can always find cream cheese, cottage cheese, hummus or guacamole that are absolutely delicious. Since I discovered lentil paté, I eat it either at breakfast or between meals on a slice of bread, but it also goes well at dinner with a salad.

Today’s recipe is very easy and quick to prepare, so without too much talk, let me show you how to make a vegetarian pate, so you don’t have to go and buy it in the store, which is full of other false flavors.
500 gr. SanoVita whole green lentils.
1 onion, chopped
3 garlic cloves (or to taste)
1 handful of chopped parsley
5 tablespoons of lemon juice
3-4 tablespoons of olive oil
Spices: salt, pepper, dried basil, paprika, ground cumin, turmeric (to taste)

Put 500 gr. lentils to a boil, in 1.5 liters of water for 45 minutes. If the water evaporated and the lentils are not soft, you can add water and leave to cook until lentils are soft.
Meanwhile, put olive oil in a pan and fry the onion until it is translucent, then add three cloves of garlic finely chopped and fry them for 2 minutes, stirring frequently.

After lentils are cooked, strain the remaining water and keep it. Over the lentils put the chopped parsley, the sauteed onion and garlic, lemon juice and all the spices listed above, then with a vertical blender, mix well throughout the composition until it becomes a creamy paste.
If the pate is not quite creamy, add a bit of the remaining water that you kept or olive oil, depending on what texture you want to have the paté.

Put the the lentil paté in a bowl / container with a lid, sprinkle some parsley on top and serve it with slices of bread.
