Finally I made a cheesecake. Since the beginning of the year I wanted one thing: to make a cake for my birthday. I had many ideas, but in the end I decided on a delicious no-bake cheesecake with strawberries. I admit that I’m no good at pastry, but it’s like this cheesecake gave me a push and I will try other desserts and more complicated cakes.
This weekend I’ve celebrated my birthday. Once in a lifetime you turn 24 years and right then you’ve decided to make the first cheesecake in your life! Bravo, Nicoleta! Oh, and wait! You make it on Friday so the cream and jelly will have enough time to harden overnight! F R I D A Y, January 13, unlucky day! I do not believe in superstitions, but one thing was clear for me in that day and I said: ,,if this cheesecake won’t be good, I will blame it on this damn day.”
But it wasn’t an unlucky day for me. And I am so happy because I had a cake for my guests, whom they loved very much. I followed the ingredients and the preparation of a classic recipe, but next time I’ll do a light cheesecake, because now I didn’t want to bother my friends with my crazy ideas.
Here’s how I made this super delicious cheesecake!

INGREDIENTS
For the dough: 400 gr. digestive biscuits, 150 gr. melted butter
Cream cheese: 150 gr. powdered sugar, 20 gr. gelatin, 100 ml. water, 100 ml. milk, 2 tablespoons of vanilla essence, 500 ml. double cream, 600 gr. cream cheese from Delaco.
Jelly: 500 gr. frozen strawberries, 1 tablespoon of sugar, 10 gr. gelatin, 100 ml. water

PREPARATION
1. Dough
Put 400 gr. of digestive biscuits in a mixer (at a time, not all at once), blend them to take the form of a fine sand, then put them in a bowl over which add the melted butter and mix. Put the biscuits in a baking shape and press it with your hands or with a cup so that dough is evenly and firmly tight. Put it in the refrigerator until you make the cream.
2. Cream cheese
Hydrates 20 gr. gelatin in 100 ml. water for several minutes until it swells, then add warm milk (not hot) and mix it in well to melt the gelatin.
In a bowl add 600 gr. cream cheese, 150 gr. powdered sugar, 2 tablespoons vanilla essence and mix the composition until you obtain a homogeneous composition. Pour in the bowl little by little the whipped cream and beat for 3-5 minutes. Last add little by little the milk with gelatin and mix the cream for another 1 minute.
Put the cream over the biscuits dough and leave it to set in the fridge for 4-5 hours or overnight.
3. Jelly
Put the other 10 gr. gelatin in 100 ml. of water, mix and allowed to hydrate for 10 minutes. In a saucepan put the 500 gr. strawberrie, 1 tablespoon of sugar and cook for 3 minutes stirring continuously. With a vertical blender, blend strawberries until you get a puree / sauce, then leave it to cool for 5 minutes. After five minutes add the hydrated gelatin in the strawberry sauce and mix well to melt the gelatin
Leave the strawberry sauce to cool until it reaches room temperature, then pour it over the cream cheese and put the cheesecake in the refrigerator 2-3 hours or until jelly has cured.
Before serving the cheesecake, remove it from the refrigerator and leave it at room temperature for 10 mind, then carefully take out the ring around the cake.
