Quesadilla – Taste of Mexico.
I just love Mexican cuisine. So colorful and so different from my country. One of my favorite recipes is Quesadilla. Therefore, through this culinary journey, I am trying to bring you closer a bit of the Latin America taste, the taste of Mexico, to be more exactly, another place I’d like to visit one day. Till then, I’m enjoying the delicacies of that place, by preparing them myself at home.
Two years ago, in 2014, I ate Quesadilla for the first time when I was in U.S.A. with a student program (Work & Travel). I worked in a restaurant three months and they had on their menu this yummy recipe. It was love at first bite. Whenever I had the chance, after finishing the work program, I used to take a Quesadilla to go or ate it back in the kitchen.
Well, coming back in Romania, of course I tried the recipe at home. There is nothing complicated, on the contrary, it’s a very easy and quick recipe to make.
- It’s ideal for those days when you don’t know what to eat/cook and the only thing you have in the fridge is meat and some vegetables
- it is perfect to take it with you at school, college or job (for lunch)
- it can be taken on car trips
- or even served at a party (your friends will love this Quesadilla)
For this recipe I used tortillas bought from the supermarket, but I encourage anyone who knows how to make them, to use homemade tortillas. For a Quesadilla you should also have sauces and dips on the side. I used pico de gallo, sour cream sauce with garlic and guacamole.
Let’s see how simple this quesadilla is to make!

INGREDIENTS
For Quesadilla
1 chicken breast, 6 tortillas, 250 gr. cheese, 1 red onion, 1 yellow/white onion, 1 tomato, 1 red pepper, 1 yellow pepper
FOR PICO DE GALLO
1 tomato, ½ red pepper, 1 yellow pepper, ½ chilli, ½ red onion, a little parsley, 2 tablespoons of lemon juice
I want to mention that this is a Quesadilla with chicken and vegetables, but it can be made without vegetables, only with chicken and cheese.

PREPARATION
Cut the chicken breast into small pieces and season it with salt, pepper, paprika and garlic. Leave it in the fridge to marinate for 15-30 minutes, then cook chicken breast in a pan with some olive oil. In the same pan, sauté all the vegetables cut into strips.
In a simple pan or a grill pan put a tortilla and leave it to warm up a bit, then put all over the tortilla some grated cheese, sauteed vegetables, cooked chicken breast and over these add again some grated chesse. Once the cheese is melted, put another tortilla on top.
Using a spatula, gently flip the Quesadilla on the other side, to melt the cheese that is on top of the ingredients too.
Cut the Quesadilla into pieces in and enjoy along with three sauces.

PICO DE GALLO
Chop into cubes all the ingredients listed above for pico de gallo, put them in a bowl, season with salt and black peper and mix. You can choose either this option or you can put all of the ingredients in a blender and turn them into a salsa.
