When it comes to salads it is quite hard to find one that I truly like. Don’t you get tired of the same classic salad recipes with lettuce, mixed vegetables and a dressing thrown in a bowl? I do. Sometimes I feel the need of something interesting, different, with a unique taste.
This salad with brussels sprouts, apples and nuts is a perfect combination of sweet, salty, sour and crunchy. It’s a nutritious salad, fresh and ready in a few minutes. And you know what? It can be served and as a garnish next to a piece of simply cooked meal (chicken, pork or beef).
This time I ate it as a main dish and I liked it very much, it’s very tasty and all the ingredients fit perfectly.

INGREDIENTS
Brussels sprouts (the quantity is up to you)
cranberry (the amount is up to you)
1-2 apples
a handful of walnuts
2-3 tablespoons of grated Parmesan cheese
For dressing: juice of 1 lemon, 4 tablespoons olive oil, 1 tablespoon of honey, 1 tablespoon of balsamic vinegar, salt and pepper. Optional: 1 teaspoon mustard.

PREPARATION
Wash the brussels sprouts and apples. . Cut the cabbage in small pieces and apples into medium pieces. Chope the walnuts with a knife into small pieces, but it is also perfect if you leave them whole. Put all ingredients in a bowl.
How to make the dressing?
In a small jar put lemon juice, 4 tablespoons of olive oil, 1 tablespoon of honey, 1 tablespoon of balsamic vinegar, salt and pepper. Put the lid of the jar and shake the composition for a few seconds. If you want you can put the ingredients in a bowl and mix them with a fork.
I prefer to make the dressing in a jar so that I can better shake the composition. It also often happens to do more dressing, so a jar is perfect because I can put the dressing in the refrigerator and to use it in other salads recipes too.
Pour dressing over the ingredients and mix with a spoon. Serve with grated Parmesan cheese on top.
