You already know that I like simple recipes that are quick and easy to make and if they are also tasty, it’s a win-win situation because I can share them with you.
There’s been almost 6 years since every time my mother comes back home from Italy, she brings us two large boxes of Rio Mare tuna (aprox. 90 small cans of tuna). All the time she asks me what I want her to bring me from Italy, I say: tuna… and olive oil. Also Barilla whole wheat pasta, because there are cheaper there than here in Romania. Maybe I tell her that I also want Parmesan Cheese. And … the list is long. Finally. The point is that I declare myself a fan of Rio Mare tuna and I use it quite often in different recipes.
I came up with this tuna and green peas salad one day when I boiled too much green peas for another dish and I really wanted to use them in a quick and simple recipe. What have I done? I called my mom, who always gives me the best ideas. She told me that I can make a quick salad using green peas, tuna and mayonnaise.
After I made this recipe 2-3 times, I’ve improved it and also added red onions and it came out even better. Yes, a simple ingredient can change the whole dish. The kitchen allows you this: to experiment, to try new recipes and if they don’t came out good at first, don’t give up because next time I’m sure you will do better.
This salad with tuna and green peas is perfect for any time of the year, but especially for festive dinners, birthdays, parties, where you can put this salad on the table, along with other dishes. I prepare it each year for New Year’s Eve and it has a lot of success.
Ok, to much talking. Let’s get to work!

INGREDIENTS
200 gr. Rio Mare tuna (tuna in oil or in water)
100-150 gr. frozen green peas
1 medium red onion
3-5 tablespoons of homemade mayonnaise
salt & pepper to taste
Opțional: 1-2 tablespoons of lemon juice

PREPARATION
Put the tuna in a strainer and let it drain out of the excess oil (or water) for 10-15 minutes.
Meanwhile put some water in a small pot and boil the peas for 5-6 minutes.
Let them cool for 10-15 minutes, then put them in a large bowl together with tuna, chopped onion and mayonnaise. Season with salt and pepper and mix well. Optional you can also add 1-2 tablespoons of lemon juice.
That’s all, now you can enjoy this salad with tuna and green peas.
You can eat it simple (dig a spoon into it) or with some slices of bread, as I did.
