Salted muffins appetizers

You know the saying ,,Nothing is lost, everything is transformed”, right? This is how I made this recipe of salted muffins appetizers. I had some green onion, feta cheese and black olives left in the fridge and I thought that I could make a recipe with these 3 ingredients. Whenever I have some leftovers in my fridge (vegetables, cheeses), I make an oven baked omelette, a salted loaf or salted muffins.

This is the first time that I made salted muffins appetizers and I liked them a lot. Of course there are many salted muffins appetizers recipes with different ingredients, but if that’s all I had in my fridge, I said to give it a try. Saltiness of feta cheese and olives, plus the green onions went really well together.

THESE salted muffins appetizers ARE IDEAL FOR:
  • Breakfast – if you are a person who is always on the run in the morning and you don’t have time to prepare breakfast, then these muffins will be help you a lot (2-3 muffins + a cup of coffee or tea and you’re good to kick off the day)
  • A snack – when you feel the need to snack or eat something between main meals
  • Lunch/snack for school / college / job
  • When you’re traveling by car (I know you’re getting hungry when you travel by car, right?)
  • Platter with other appetizers at festive / holiday dinner

There is nothing complicated with this recipe, it’s super easy and quick to make and I’m sure you already have most of the ingredients in your kitchen. And you do not have to use the same ingredients as I did for the filling: instead of feta cheese you can use any other cheese you want, instead of olives you can use red bell pepper and so on. You got the idea, right?

INGREDIENTS
20 gr. of flour (I used whole wheat flour)
200 gr. feta cheese (you can replace it with any grated cheese: cheddar/mozzarella
1 handful of black olives
geen onion *to taste
4 full tablespoons of yogurt
5 tablespoons of olive oil
2 eggs
5 gr. of baking powder
salt and pepper (to taste) Be careful with the amount of salt because the feta cheese is quite salty

PREPARATION
Preheat the oven at 180°C.

Cut the green onions and the black olives into small pieces, grate the feta cheese and put them in a bowl. In another bowl beat the eggs, then add 4 tablespoons of yogurt, 4 tablespoons of olive oil, salt and pepper to taste. Put the eggs and yogurt mixture over 200 gr. of whole wheat flour and mix to combine.

Add the green onion, feta cheese and olives and mix well all the batter.

Put the batter in a muffin tray and put it in the oven for 20-25 minutes (time may depend on the power of everyone’s oven) until the muffins grow and get a golden brown color.

Put a toothpick in the middle of one muffin and if it comes out clean, the muffins are baked.

I have made a section of one muffin to show you how fluffy it is and so you can see those pieces of green onions, olives and feta cheese inside it.
