I think we all remember our childhood, those delicious meals that we used to ea, but especially the desserts that our mothers or grandmothers used to make us.
Speaking about the taste of childhood, today’s recipe is a challenge from Diana and Dragos from Love for Spices. They challenged me to make a dessert that reminds me of my childhood, so I chose a simple dessert that my grandmother used to make me when I was craving something sweet. I grew up with my grandparents up to the age of 5 and I remember that every Saturday she was doing a cake. Not being able to make cakes all the time, she used to make something quick, that is semolina pudding.
Semolina pudding can also be eaten at breakfast, not just as a dessert. It’s pretty tasty and it will fill you up with energy for the first part of the day. I served this pudding with an ad-hoc black currant sauce, but you can use any topping you want: jams, honey, syrups, etc.
Here’s the recipe!

INGREDIENTS
500 ml. of milk
75 gr. semolina (about 5 tablespoons)
10 gr. of Bourbon vanilla sugar
2 tablespoons of vanilla essence
Topping of your choice: I used a black currant sauce

PREPARATION
First put the milk to a boil in a pot, add the vanilla sugar and the vanilla essence. I didn’t add any sugar because I’m trying to avoid it as much as I can, but if you want, you can add a few tablespoons of sugar depending on how sweet you want this pudding to be.
Once the milk starts to boil, gradually add the semolina, stirring with a whisk to avoid lumps form. Let simmer about 3-4 minutes stirring all the time.
Black currant sauce
For currant sauce you need 2 handful of frozen blackcurrant, 1 tablespoon of vanilla essence, 1 tablespoon of lemon juice, 3 tablespoons of water and 2 tablespoons of sugar. Put all the ingredients into a saucepan and let them simmer for 3-5 minutes, stirring occasionally, until the sauce thickens.
