I really like sweet potatoes and for a long time I wanted to show you a recipe with this super vegetable, but I did’t have any interesting ideas.
Until today when I opened the cupboard and near those sweet potatoes, which I bought 3 days ago, stood 3 cans of Rio Mare tuna. And guess what? It was like in those movies or disney cartoons when a red light lit over my head. I said that these two ingredients would go really good together in a recipe, so I thought to cook stuffed sweet potato with tuna.
It’s very simple to make and ready in 30 mins. It goes perfect for both lunch and dinner 🙂
Here’s the recipe:

INGREDIENTS (for 2 servings)
1 sweet potato
100 gr. tuna
1 small red onion
1 tbsp of sweet corn
½ juice of a lemon
Salt&peper to taste

PREPARATION
Wash well the potato, then cut it in half. Drizzle some olive oil and salt over the two halves, then prick them several time with a fork. Put the potato in the preheated oven for 25 mins until it’s soft, turning it on the other side after 10 mins.
In a bowl put the drained tuna, corn, 1 chopped red onion, juice of a ½ lemon, a little salt and pepper. After the potato is baked, with a spoon/fork remove a bit in the middle of the potato to make room for the filling. Add the core removed in the same bowl with tuna and mix well.
Fill the sweet potato with the that composition and sprinkle some chopped parsley on top.
It is incredibly delicious!
