Tagliatelle with salmon and green peas, a simple yet full of flavor recipe
A little while ago I was called by a former college classmate who worked for Norda Shop.com, a store who sells Scandinavian inspired products and decorations, and she proposed me to film a Nordic inspiration recipe for them. I accepted immediately their challenge, you know me, I like to cook and I am opened to any project (well, almost any project) that comes in the way and which matches with the theme of my blog.
I’ve researched a little about Scandinavian cuisine and from what I read, I found out that in the Nordic diet is very often found, among other foods, fish, especially salmon and herring. So it was very easy for me to choose a region-specific recipe that would be elegant as well, because it had to come as an inspiration for those who want to prepare something special for Valentine’s Day.
This tagliatelle with salmon and green peas recipe may seem a little complicated, but it’s not anything like that, it is very simple to make, it’s ready in a short time, I think the ingredients are for everyone’s bugdet and if you want to prepare it for a special occasion, I recommend it to you. Whatever the occasion, your partner, family or your closest ones will admire and love your work.

INGREDIENTS
2 medium salmon steaks
250 gr. fresh tagliatelle
2 handful of green peas (if you don’t like peas you can omit them or you can use spinach or mushrooms instead)
1-2 chopped garlic (or at your will)
200 ml. cream for cooking (I used one with 32% fat)
a little chopped dill (to taste)
½ lemon juice
olive oil
salt & pepper
Optional: grated parmesan cheese (to sprinkle on top)

PREPARATION
Put two pots with water and a little salt to boil, in which you have to cook the tagliatelle pasta and the green peas. Boil the pasta according the time written on the package. The peas should be cooked for 6-8 minutes.
Season the salmon with salt & pepper. Put olive oil in a non-stick skillet and fry salmon 2 to 2:30 minutes on each side. Take the salmon from the skillet and put it on a plate. Let it cool for a while, then carefully remove out all the bones of it. First remove the skin first from the edge, then the bone from the middle. Cut it to pieces (or tear it with you hand), searching with your finger for little bones.
After this procedure, saute 1 or 2 garlic cloves in the same pan, but also using the same oil in which you’ve cooked the salmon (we do not want to lose all the flavor from that oil). After 20-30 seconds after the garlic has hardened, add 1 full ladle of water from the pot in which pasta has boiled and let to cook a little.
Put the sour cream in the pan, let boil for 10-15 sec, then add the salmon and the boiled green peas. Mix gently with a wooden spatula to avoid breaking the salmon pieces. Leave it to boil for another 2 minutes, then add the tagliatelle pasta cooked al dente.
Squeeze juice from ½ lemon, put the chopped dill into the pan, mix a little and leave to cook approx. 1 minute at low temparature. Taste the sauce and see if it still needs salt. Cover the pan with a lid and leave it aside so that all the flavors intertwine.
Serve these tagliatelle with salmon and green peas with a good white wine and a pleasant company!
