Teriyaki chicken. Taste of Japan

Teriyaki chicken is one of the most popular Japanese recipes and one of my favorite meal. With few ingredients you can make this easy and delish meal.

I didn’t make this Teriyaki Chicken one to one as the original recipe because I like to adapt different recipes to my taste. Even so, I say I didn’t get too far of the japanese teriyaki recipe very much. I replaced regular rice with a cauliflower rice because it is a healthier substitute. A more low carb version.

Homemade Teriyaki sauce, which is the star of this preparation, is very simple to make and so yummy! That honey lemon glaze on top of the chicken…mmmm…I can’t describe it! You have to try it!

INGREDIENTS:
1 chicken breast cut in half
1 head of cauliflower
1 head of broccoli
2 sliced carrots
2 cloves of garlic
4 tbsp of olive oil
salt & black pepper (to taste)

For teriyaki sauce: 3 tbsp of soy sauce, 3 tbsp of honey, half of lemon juice (or orange of grapefruit), 1 tbsp finely grated fresh ginger, 1 tbsp sesame seeds

PREPARATION:
Marinate the chicken breast with salt, black pepper, 2 tsp of olive oil and 2 cloves of garlic. Stir and put it in a glass container, cover it with plastic wrap and put it in the fridge for 30 minutes.

Meanwhile wash the broccoli and cauliflower under running water, then cut them into small florets. Steam the broccoli and the carrots cut into thin slices for 5 minutes.

Put the chicken breast into a baking sheet lined with parchement paper and cook it in the preheated oven at 180°C, for 25-30 minutes.

How to make cauliflower rice?

Put the cauliflower florets into a food processor and puls until finely chopped (like rice). Transfer the cauliflower rice into a saucepan with 3 tbsp of olive oil, salt, black pepper and let cook for 3-5 minutes on low heat, stirring occasionaly.

How to make teriyaki sauce?

In a sauce pan put 3 tbsp of soy sauce, 3 tbsp of honey, half of lemon juice (or orange of grapefruit juice), 1 tbspof finely grated fresh ginger. Let cook for 3 minutes until the sauce has thickened (stir from time to time). In the last 2 mins add 2 tsp of grated ginger.

After the chicken is cooked, put it in the teriyaki sauce and flip it from side to side until it’s covered with sauce. Sprinkle with sesame seeds on top of the chicken.
